Watercress soup

Had potato watercress soup with my leftover lamb ragu tonight. I really like watercress, and the idea of making a soup with it seemed enticing, not to mention it's super easy. I used a recipe out of this French cookbook I have and here are the basics:

Butter
1 onion
2 red potatoes
2 1/2 cups chicken stock
1 bunch watercress
1 cup milk
nutmeg, salt, pepper

  1. Looks great! Undercurrent had a watercress soup on their menu Saturday evening. Did not try it.... maybe I should have!

  2. What is watercress? I've heard of it.. but never eaten it. I thought it was like lettuce.. but lettuce soup doesn't sound all that enticing.. even with butter!!
